BBQ Chili

Perfect for any night of the week or celebration occasion, don't count on leftovers of this delicious dish.

1 carton of Farm Rich Smokehouse Pulled Pork BBQ, thawed
1 large onion, diced
1 can (4 oz.) diced green chilies
1 (2 oz.) package chili seasoning
2 cans (14.5 oz.) chili beans
1 can (14.5 oz.) crushed tomatoes
Sour cream, shredded cheese and chopped scallions for garnish, optional
Remove thawed BBQ from package and in a medium mixing bowl separate BBQ into bite-sized pieces. Set aside.
In a medium sized sauce pan over medium heat sauté onions until translucent (about 5 minutes). Add green chilies and chili seasoning and sauté, stirring often for 1 minute more.
Stir in chili beans, tomatoes and pork. Simmer over low heat, stirring occasionally for 30 minutes.
To serve, ladle hot chili into bowls and garnish with sour cream, shredded cheese and chopped scallions if desired.
Makes: 2 quarts
Serves: 6-8
